Ingredients

  • 1 Onion finely chopped
  • 1 Tin Lentils
  • 1 Tin Tomatoes
  • 1 Tin Sweet Corn
  • 1 Tin Butter Beans
  • Any other legume you want to chuck in.
  • Vegan Stock
  • Mixed herbs
  • Salt and Pepper to season

Instructions

  1. Put the onions in a pan with a little olive oil and cook until they are slightly transparent.
  2. Open all tins
  3. Chuck ALL the ingredients in to the Slow Cooker
  4. Mix in Herbs,
  5. Season to taste
  6. Set Slow Cooker to Low Heat
  7. Go out and have fun!

  8. Come home turn off Slow Cooker
  9. Serve with Rice, or potatoes, or warm crusty bread

  10. To be really exotic sprinkle some cheese on top
