Most women who are peri-menopause, post-menopause or menopausal will tell you that weight gain can be a problem. Yes we all know about those exceptions who miraculously ‘look younger and better now I’m older’. But come on, let’s be fair most of them rely on good press to pay their mortgages! Personally if someone told me I could be rich and famous if l never ate chocolate again and stayed a size 8 forever, I’d turn them down. I love my food too much, I really do. Yup, I’m weak! This vegan casserole though is genuinely tasty and you can zhush it up with anything you’ve got in your cupboards.
I read a really good blog last week by a lovely lady ‘d’un certain age’ called Tanya Clark. She went vegan for a month as she’d been finding it difficult to drop a few pounds. Easy Vegan Casserole
Easy Vegan Casserole - perfect for the slow-cooker!
- 1 Onion finely chopped
- 1 Tin Lentils
- 1 Tin Tomatoes
- 1 Tin Sweet Corn
- 1 Tin Butter Beans
- Any other legume you want to chuck in.
- Vegan Stock
- Mixed herbs
- Salt and Pepper to season
- Put the onions in a pan with a little olive oil and cook until they are slightly transparent.
- Open all tins
- Chuck ALL the ingredients in to the Slow Cooker
- Mix in Herbs,
- Season to taste
- Set Slow Cooker to Low Heat
Go out and have fun!
- Come home turn off Slow Cooker
Serve with Rice, or potatoes, or warm crusty bread
To be really exotic sprinkle some cheese on top
